- 1? cups cooked rice (cooked in fat-free chicken broth), cooled
- 1 cup cooked lentils, cooled
- ½ cup chopped fresh tomatoes
- ¼ cup sliced green onions
- 1 tablespoon chopped fresh parsley
- 1 clove garlic, minced
- ¼ teaspoon ground black pepper
- ¼ cup Italian salad dressing
- lettuce leaves
- Combine rice, lentils, tomatoes, onions, parsley, garlic, pepper and salad dressing.
- Serve on lettuce leaves.
