Lentil-Brown Rice Salad

Recipe Description

Makes 4 servings

Ingredients

  • 1½ cups cooked brown rice (cooked in chicken broth), cooled
  • 1 cup cooked lentils, cooled
  • 1 cup diced fresh tomatoes
  • ? cup sliced green onions
  • 1 tablespoon chopped fresh parsley
  • 2 tablespoons red wine vinegar
  • 1 tablespoon olive oil
  • 2 teaspoons fresh lime juice
  • 1 clove garlic, minced
  • 1 teaspoon Dijon-style mustard
  • ¼ teaspoon ground black pepper
  • 2 tablespoons water
  • lettuce or spinach leaves

Directions

  1. Combine rice, Lentils, tomatoes, onions and parsley in medium bowl.
  2. Whisk vinegar, oil, juice, garlic, mustard, pepper and water in small bowl; add to rice mixture and toss.
  3. Serve on lettuce leaves.
