Lobster and Rice Salad
Recipe Description
Makes 6 servings.Ingredients
- 3 cups hot cooked rice
- 1/4 cup vinaigrette dressing
- 2 cups cooked lobster meat cubes
- 1 cup sliced fresh Mushrooms
- 1/2 cup red pepper strips
- 1/3 cup sliced black olive|ripe olives
- 1/4 cup sliced green onions
- 1 1/2 teaspoons snipped fresh basil leaves
- 1 teaspoon snipped fresh dill
- 1 teaspoon snipped chives
- Fresh herbs (optional)
Toss rice with dressing in large bowl; cool. Add lobster meat, Mushrooms, pepper, , onions and herbs; toss lightly. Garnish with additional fresh herbs if desired.
