Mango-Ginger Upside-down Cake

Ingredients

  • ½ tsp vanilla
  • ½ cup milk
  • ½ tsp cinnamon
  • ½ tsp salt
  • 2 tsp baking powder
  • 1½ cups flour
  • 2 eggs
  • 1 cup granulated sugar|sugar
  • ½ cup butter
  • 1 tbsp lemon juice
  • 2 mangos, thinly sliced
  • 1 tbsp crystallized ginger, finely chopped
  • ¼ cup brown sugar
  • 3 tbsp butter

Directions

  1. Melt 3 tbsp butter in 10 inch cast iron skillet.
  2. Remove from heat and sprinkle with brown sugar and crystallized ginger.
  3. Toss mangos with lemon juice.
  4. Arrange over brown sugar mixture.
  5. Beat ½ cup butter until creamy.
  6. Gradually add granulated sugar|sugar.
  7. Add eggs, 1 at a time.
  8. Combine flour with baking powder, salt and cinnamon.
  9. Add to butter mixture alternately with milk.
  10. Stir in vanilla.
  11. Spoon over mangos.
  12. Bake at 350°F for 35-40 minutes.
  13. Cool in skillet 5 minutes.
  14. Invert onto serving platter.
