Mango-Lime Pudding

Recipe Description

Makes 6 servings.

Ingredients

  • 3 cups cooked white rice
  • 3 cups milk
  • 1/8 teaspoon salt
  • 1 (14-ounce) can sweetened condensed milk
  • 2 ripe mangos, peeled and finely chopped
  • 3 tablespoons freshly-squeezed lime juice

Directions

  1. Combine rice, milk and salt in a large saucepan.
  2. Cook over medium heat, stirring frequently, until thick and creamy, about 15 to 18 minutes.
  3. Stir in sweetened condensed milk|condensed milk, mangoes and lime juice.
  4. Spoon into bowls and serve at room temperature or slightly chilled.
