Mock Fish Buddhist

Ingredients

  • 1 large, cooked, peeled potato
  • 2 tablespoons flour
  • 1 for frying peanut oil
  • 1 small, sliced onion
  • 10 wood ear mushroom|wood ears <ref>
  • Wood ears are a type of mushroom or shelf fungus. When soaked it has a crunchy, gelatinous texture with little taste. </ref>
  • ½ teaspoon salt
  • ½ teaspoon granulated sugar|sugar
  • ? cup water
  • ½ pound snow pea pods

Directions

  1. Wood ears must be soaked to soften, tough ends removed and cut in slivers.
  2. Sprinkle potatoes with flour and deep-fry until golden.
  3. Drain and set aside.
  4. Pour off all but 2 tablespoons of the oil, reheat an add onion.
  5. Stir-fry 10 seconds and add snow peas and wood ears.
  6. Stir-fry another 10 seconds and add salt, granulated sugar|sugar and water.
  7. Bring to rapid boil, stirring constantly, and cook until peas are just tender crisp.
  8. Add reserved fried potato slices, heat through and serve.
