Nadasdy Meatball Soup
Recipe Description
A great Hungarian soup for meatball lovers.Ingredients
- 5 cups beef stock
- 1½ lbs ground pork
- 2 carrots diced
- 1 parsnip diced
- 1 celeriac|celery knob diced
- 1 cup rice, half cooked
- 2 eggs
- 5 oz flour
- paprika
- salt and pepper
- 1 or 2 cloves of garlic crushed
- 1 tbs lard
- bunch of parsley
- Sauté vegetables in half the lard.
- Prepare meatballs.
- Mix rice, pork, eggs, garlic, flour, salt, pepper, and make small meat- balls.
- Add meatballs and vegetables to broth and cook for 15 minutes or until meatballs are done.
- Garnish with parsley and serve hot.
