Paella Salad II

Recipe Description

Makes 6 servings


  • 2 cups cooked rice (cooked in chicken broth and 1/8 teaspoon saffron*)
  • 1 cup cooked Chicken breast cubes
  • 1 cup peeled, deveined cooked Shrimp
  • 1 medium tomato, seeded and diced
  • 1/2 cup chopped Onion
  • 1/3 cup cooked garden pea|green peas
  • 1/3 cup sliced black olive|ripe olives
  • 3 tablespoons white wine vinegar
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground white pepper
  • lettuce leaves


Combine rice, Chicken, Shrimp, tomato, Onion, Peas and in large bowl.

Combine vinegar, oil, garlic, salt and pepper in jar with lid. Pour over rice mixture; toss lightly. Serve on lettuce leaves.
