Paella Salad II

Makes 6 servingsIngredients
- 2 cups cooked rice (cooked in chicken broth and 1/8 teaspoon saffron*)
- 1 cup cooked Chicken breast cubes
- 1 cup peeled, deveined cooked Shrimp
- 1 medium tomato, seeded and diced
- 1/2 cup chopped Onion
- 1/3 cup cooked garden pea|green peas
- 1/3 cup sliced black olive|ripe olives
- 3 tablespoons white wine vinegar
- 1 tablespoon olive oil
- 1 clove garlic, minced
- 1/2 teaspoon salt
- 1/2 teaspoon ground white pepper
- lettuce leaves
Combine rice, Chicken, Shrimp, tomato, Onion, Peas and in large bowl.
Combine vinegar, oil, garlic, salt and pepper in jar with lid. Pour over rice mixture; toss lightly. Serve on lettuce leaves.
