Paella Salad III

Recipe Description

Makes 6 servings

Ingredients

  • 1 6-ounce package frozen cooked, peeled, and deveined Shrimp
  • 3 cups cool cooked yellow rice*
  • 1 8-ounce can minced clams, drained
  • 1 1/2 cups diced cooked Chicken
  • 1 1/2 cups sliced celery
  • 1 1/2 cups cooked garden pea|green peas
  • 1/2 cup diced green bell pepper
  • 1/3 cup sliced green onions
  • 1 cup Mayonnaise
  • 2 tablespoons dry white wine
  • 3 tablespoons capers (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon ground black pepper
  • 2 medium tomatoes, cut into wedges

Directions

Thaw and slice Shrimp in half lengthwise. Combine with rice, clams, Chicken, celery, garden pea|green peas, green bell pepper|green pepper and onions.



Blend Mayonnaise, wine, capers, salt, garlic powder and black pepper. Pour over Shrimp mixture; toss lightly. Chill. Use tomatoes for garnish or toss with salad before chilling.
