Chicken and Peas Pilaf
Recipe Description
Makes 6 servings.Ingredients
- 2 large onions, sliced
- 1½ cups uncooked rice
- 3 tablespoons butter or margarine
- 3 cups chicken broth
- 1 x 10-ounce package frozen garden pea|green peas
- 2 cups coarsely chopped cooked chicken or turkey meat|turkey
- salt, ground black pepper and a pinch of saffron
- Cook onions and rice in butter until onions are transparent.
- Stir in broth, peas and chicken. Season with salt, pepper and saffron. Bring to a boil.
- Stir once or twice. Lower heat to simmer. Cover; cook 15 minutes or until rice is tender and liquid is absorbed.
- Fluff lightly with fork.
