Chicken and Peas Pilaf

Recipe Description

Makes 6 servings.

Ingredients

  • 2 large onions, sliced
  • 1½ cups uncooked rice
  • 3 tablespoons butter or margarine
  • 3 cups chicken broth
  • 1 x 10-ounce package frozen garden pea|green peas
  • 2 cups coarsely chopped cooked chicken or turkey meat|turkey
  • salt, ground black pepper and a pinch of saffron

Directions

  1. Cook onions and rice in butter until onions are transparent.
  2. Stir in broth, peas and chicken. Season with salt, pepper and saffron. Bring to a boil.
  3. Stir once or twice. Lower heat to simmer. Cover; cook 15 minutes or until rice is tender and liquid is absorbed.
  4. Fluff lightly with fork.
