Passover Lemon Pavlova

Ingredients

  • 1 cup granulated sugar|sugar
  • 1½ cup water
  • ¼ cup potato starch
  • 3 egg yolk|yolks
  • 1 tbsp margarine
  • ¼ cup lemon juice
  • 1 tsp lemon extract, optional
  • 6 egg whites
  • ? cup granulated sugar|sugar
  • 1 tbsp potato starch

Directions

  1. Whip egg whites with granulated sugar|sugar (? cup) and potato starch until very stiff.
  2. Boil 1 minute.
  3. Add margarine, juice, and lemon extract.
  4. Mix until smooth.
