Passover Sponge Cake

Ingredients

  • 9 eggs, separated
  • 1¾ cup granulated sugar|sugar
  • ? cup potato starch
  • ¼ cup cold water
  • ? cup cake flour
  • ½ orange, juice and rind
  • ½ lemon, juice and rind

Directions

  1. Separate eggs putting whites in mixing bowl and egg yolk|yolks in cold water.
  2. Beat whites by hand or electric mixer until stiff but not dry.
  3. Gradually add granulated sugar|sugar.
  4. Add egg yolk|yolks and water mixture and beat well.
  5. Add juices and rinds and beat well.
  6. Add cake flour and starch that have been mixed with very low mixer or by hand.
  7. Be sure that the flour mixture is thoroughly blended.
  8. Put in angel food cake pan and bake about 45 minutes or until done in 350 °F oven.
  9. You can improvise by adding nuts, cinnamon-granulated sugar|sugar, or other things but the basic recipe is moist and tasty and wonderful especially as the base for fruits).
