Pasta Fagioli Soup

Ingredients

  • 2 tbsp olive oil
  • 5 slices cooked bacon, crumbled
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 1 medium onion diced
  • 2 cloves garlic, minced (optional)
  • 3 cans chicken broth
  • 1 can kidney beans, drained
  • 1 can cannellini beans, undrianed
  • 1 cup ditalini pasta
  • Parmesan cheese

Directions

  1. In soup pot, heat oil over medium heat.
  2. Add bacon, carrots, celery, onion and garlic.
  3. Cook until tender.
  4. Add chicken broth and bring to a boil.
  5. Reduce heat and add kidney beans.
  6. Smash cannellini beans with a fork and add to soup.
  7. Bring to boil.
  8. Add pasta and cook for 10 minutes or until pasta is tender.
  9. Serve sprinkled with Parmesan cheese.
