Chicken Artichoke Salad

Recipe Description

Makes 4 servings.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless skinned chicken breasts, cut into chunks
  • 3 cups hot cooked rice (cooked in chicken broth)
  • ½ cup sliced red onion
  • 1 medium green bell pepper|green or red bell pepper|red pepper, chopped
  • 1 x 14-ounce can artichoke hearts, drained and quartered
  • ¼ teaspoon salt

  • 2 tablespoons olive oil
  • 3 tablespoons cider vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper

Directions

  1. Melt oil in large skillet over medium-high heat.
  2. Cook chicken in hot oil until lightly browned, about 5 minutes.
  3. Combine chicken, rice, onion, pepper, artichoke hearts, salt and pepper in large bowl.
  4. Toss with Honey mustard Dressing.

  6. Combine oil, vinegar, honey, mustard, salt and pepper in small saucepan; heat just to boiling.
  7. Serve warm.
