Aida’s Grilled Zucchini Pizzas

Who doesn’t love a personal pizza? Aida’s version grilled version is hard not to love!

Grilled zucchini, goat cheese, and herbs top rustic grilled pizza dough that is simple to make from scratch.

It might not quite be grilling season, but these grilled pizzas can be made on an indoor grill pan as well. Consider it a warm up for the warmer months to come.

Aida Mollenkamp puts together a simple vegetarian pizza that is simple—yet it doesn’t lack in flavor. Grilled zucchini is the star, but it gets a little help from the fancy grilled dough.

Aida makes her own pizza dough, which sounds complicated but actually isn’t (especially when you have a handy stand mixer to do all the heavy lifting for you).

If you don’t have a stand mixer, or don’t have the time to make your own dough, you can definitely use pre-made dough. We won’t tell, promise.

After you have the dough prepped, start working on your toppings. Grill up the zucchini and get those beautiful grill marks on them. Then toss them with a red wine vinegar, red pepper flakes, salt, and pepper.

Now the grill is all warmed up and ready for the dough. Most people will bake their pizzas, which is great, but grilling brings a nice flavor that you just can’t replicate. Also, you get those cool grill marks and its look rustic!

Once the dough is done, all that’s left is to assemble your toppings—zucchini, goat cheese, garlic, and a few herbs. Serve these individual pizzas with a crisp white wine and enjoy the wonderful Spring weather!
