Our Meatless Mondays installment comes a day late this week, but we are making up for our tardiness by sharing a guaranteed slam-dunk: Emeril Lagasse’s Spicy Black Bean Cake. Pairing a deliciously crisp, fried black bean patty with a light, refreshing topping, Emeril’s recipe will have your whole family coming back for seconds.

While everyone commonly associates Emeril with Cajun cooking, in this installment of Fresh Food Fast Emeril shows us he can also develop some delicious heat in a more Southwestern style. Incorporating black beans, mexican hot sauce, cumin, and coriander, Emeril is able to capture just the right amount of kick that will have your taste buds saying BAM!

Personally speaking, the only exception I take to Emeril’s recipe is that he uses a LOT of cilantro. Granted, I am one of those people who would be happier if cilantro didn’t exist, but he uses that leafy green devil in the cake itself, in the topping, and he even recommends a cilantro garnish. Let’s not go nuts on the cilantro for the sake of my sanity, okay?

If Emeril’s recommended plating doesn’t appeal to you, we suggest using a smaller bean cake as a substitute for a hamburger patty. Add a little guacamole and some salsa on the bun, and you’ve got a south-of-the-border sandwich so good that it will make people forget they’re not eating meat.
