In this episode of Everyday Italian, Giada shows us how to make a delicious Portobello Mushroom Parmesan that is mouth-watering to even the most die hard carnivores.

Generally speaking, when people think about ordering a Parmesan dish, they think of chicken or veal parmesan, maybe eggplant for vegetarians. I know I’d never think of doing a mushroom parmesan, but after watching this video, I realized just how easy and delicious of a dish it is. You don’t need a lot of spices, you don’t need a whole litany of ingredients; really, all you need is the mushrooms, olive oil, salt, pepper, a bunch of cheese, butter, and marinara sauce. Even the sparsest of bachelor pads probably has all of those kitchen staples handy (except the mushrooms, let’s be real – no self-respecting bachelor has fresh produce sitting around).

The only thing that is better than how good this dish tastes is how easy it is to make. It’s a simple grill-and-bake preparation, where you grill the mushrooms with a little olive oil to par-cook the mushrooms, then place them in a buttered dish with some marinara and copious amounts of cheese, and bake it until it’s gooey and delicious. A simple guide to how much cheese you should use is the following: if you think you have enough cheese, you probably don’t, so put some more on there.

You can try your hand at the recipe yourself and let us know how it turned out!

  • 3 tablespoons extra-virgin olive oil, plus extra for greasing the grill pan
  • 4-6 portobello mushrooms
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 cup marinara sauce (store bought or homemade)
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan
  • 2 tablespoons butter, cut into small pieces
