Giada’s Creamy Penne & Shrimp

In today’s installment of Giada at Home, Ms. De Laurentiis whips up a homestyle creamy penne dish that is to die for.

It’s simple to prepare and can be done in one pot, with the exception of the penne. How’s that for simple?

First, get your penne started in a pot of boiling water. While it cooks for about 10-12 minutes, you’ll cook the sauce.

In a sauce pan, heat up olive oil, chopped garlic, and shrimp; season with salt, pepper, and red pepper flakes. Once the shrimp have turned pink, take them out of the pan and set aside.

Next, in the same sauce pan, add the tomatoes, white wine, clam juice, and whipping cream. Let that simmer together over low heat.

Chop up your parsley and basil and add to the creamy sauce mixture. Next, add the cooked shrimp back in, along with the cooked penne and grated Parmesan. Mix it all up!

Serve this pasta dish with a simple mixed green salad, or a nice antipasto starter platter. A chilled white wine or pinot noir would be a great accompaniment with this as well.

Creamy Penne & Shrimp Ingredients:

  • 1 pound penne pasta
  • ¼ cup olive oil
  • 1 pound medium shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • ½ teaspoon kosher salt, plus extra for seasoning
  • ½ teaspoon freshly ground black pepper, plus extra for seasoning
  • 1 (15 ounce) can whole tomatoes, drained and roughly chopped
  • ½ cup chopped fresh basil leaves
  • ½ cup chopped fresh flat leaf parsley
  • ¼ teaspoon crushed red pepper flakes
  • 1 cup white wine
  • 1/3 cup clam juice
  • ¾ cup heavy whipping cream
  • ½ cup grated Parmesan
