Giada’s Crab and Lemon Bruschetta

Giada’s Crab and Lemon Bruschetta might be the most perfect Summer appetizer.

In this installment of Giada at Home, Giada De Laurentiis shows us her unique spin on the classic Italian appetizer of Bruschetta. Rather than simply using chopped tomatoes, Giada incorporates crab meat as well as a Greek yogurt & mayonnaise sauce to dollop on top.

If you’re like me and don’t necessarily love eating a lot of raw tomato, but love bruschetta for the delicious toast, this recipe is like a dream come true. Starting with a sauce that incorporates mayonnaise, Greek yogurt, and just a little bit of cayenne pepper for some added kick. Though she doesn’t call it such, this is almost like an aioli to put on top.

The real secret in this recipe is finding tasty chunk crab meat, not imitation crab. I repeat: do not use imitation crab for this recipe. It may be fine and delicious in your California Rolls and your crab dips, but when crab is at the center of a dish, as in this case, you can’t scrimp.

When you have good crab, it will speak for itself, and all you need to do to dress it is add a pinch of salt, some lemon juice, and a few fresh chopped chives, which will add some flavor complexity and color to the topping. Put it all over some deliciously toasted bread with olive oil and salt, toss some sauce on top, and you’ll be the hit of every party you go to this Summer.
