Kale is all the rage these days, especially if you’re trying to eat a healthy diet. Kale juice smoothies, kale chips, and kale side dishes are some of the top choices for healthy eaters.

After a while, you long for something with a little bit more flavor and variety. When that urge strikes, try out Guy Fieri’s Crunchy Kale Salad.

Guy kicks up the typical kale salad by mixing in radicchio, walnuts, and Pecorino Romano cheese. A natural dressing of lemon juice and olive oil keeps the salad light, but still flavorful.

So why is kale so good for you? Kale, a dark green leafy vegetable, is very high in beta carotene, vitamin K, vitamin C, and rich in calcium. Kale also has a high level of sulforaphane, an antioxidant with potent anti-cancer properties.

While kale is still rich in nutrition when cooked, raw chopped kale is the best way to preserve the nutrients that are present and will benefit the body.

Crunchy Kale Salad Ingredients:

  • 4 cups julienned kale, cleaned and stems removed
  • 2 cups julienned radicchio, cleaned and core removed
  • ¼ cup extra virgin olive oil
  • 1 lemon, juiced
  • 1 teaspoon lemon zest
  • ½ cup shaved Pecorino Romano, plus extra for garnish
  • ¼ cup dried currants
  • 2 tablespoons finely sliced fresh basil
  • ½ cup toasted walnuts
  • Kosher salt and fresh ground pepper to taste
