When you’re trying to eat healthy, eating salad is probably the easiest and hardest thing to do. On one hand, it’s a simple light lunch. On the other hand, you probably get tired of eating “rabbit food” every day.

Of course, there’s a number of salad combinations that you can make to keep yourself from getting burned out. Here at RecipeHub, our favorite salad to indulge in is a Nicoise Salad (or Salad Nicoise).

Nicoise Salad is a homestyle dish from the French countryside, so there are several ways you can make it. But the basic recipe includes tuna—which is lean protein full of Omega-3s—green beans, olives, potatoes, and hard boiled eggs dressed in nice vinaigrette. Delicious, right?

We certainly think so, and Melissa d’Arabian agrees. She whips up a wonderfully simple Nicoise salad that could feed a crowd. It comes together in minutes, but it will keep you full and satisfied for hours.

Two tips we can share with you after indulging in this recipe. First, make sure you use oil-packed tuna and not the canned stuff in water (ahem, Chicken of the Sea). Some even like to alter this recipe by cooking up a piece of tuna steak—or even employing the searing technique so that it is still rare in the middle.

Additionally, if you don’t have others to feed with this meal, portion out the amount you will eat now and save the leftovers for later. Put the dressing on the portion you are planning to eat right away and portion the rest out for weekday meals that you can take with you to work!

Nicoise Salad Ingredients:

  • 1 head romaine lettuce, cut into bite-sized pieces OR mixed Spring greens
  • 4 hard-boiled eggs
  • 2 five-ounce cans good quality light tuna in oil, drained
  • 2 green onions, chopped
  • 1 tomato, seeded and chopped
  • ½ pound green beans, blanched
  • 2 large red potatoes, cubed and boiled
  • Kosher salt
  • Freshly ground black pepper
  • Lemon-Olive Vinaigrette
