If you’re familiar with soba noodles, you’ve probably had them at a Japanese restaurant with a soy-based dipping sauce and a side of tempura.

Melissa d’Arabian shows us a different spin on the Japanese noodles. Her low-calorie dish is Asian inspired and full of protein and good fats.

First, soba noodles are actually quite healthy for you. They are thin noodles made from buckwheat flour—no relation to wheat despite it being in the name—and it is gluten-free.

While it may not have a ton of flavor on its own, it definitely serves as a healthy base for a variety of toppings and dressings.

Melissa combines soba noodles with boiled shrimp, carrots, and snow peas and then tops it all with a creamy soy-ginger peanut sauce.

Even though she uses full fat creamy peanut butter as the base of her sauce, it does hurt the healthiness of this dish. In fact, the protein and good fats in peanut butter add to it!

Not only is this dish healthy, but it is super simple to make. Melissa boils the soba noodles, shrimp, carrots, and snow peas in one pot; the dressing can be made in one bowl. Once you have the 2 parts made, you just need to combine and toss!
