Rachael Ray makes her lo mein vegetarian, but you can add any type of meat to round out this noodle dish. The rich combination of vegetables—snow peas, bell peppers, mushrooms, scallions, and bean sprouts—make this lo mein dish satisfying but also completely healthy.

If you want to add meat, you could use anything like shrimp, chicken, beef, or pork. Just slice it thinly and stir-fry it separately before you cook your vegetables.

Rachael uses simple thin spaghetti and a sauce made from dark soy sauce and sesame oil to get that Chinese restaurant quality taste and look. Whip up this great weeknight meal—your family will never guess it wasn’t delivery!

No Pain Lo Mein Ingredients:

  • 2 tablespoons vegetable or peanut oil
  • 1 cup snow peas, cut in half
  • 1 red bell pepper, seeded and cut into match stick size pieces
  • ½ pound assorted mushrooms (shiitake, straw, enoki, oyster)
  • 4 scallions, thinly sliced
  • 2 cups fresh bean sprouts
  • 2 inches fresh ginger root, minced or grated
  • 4 cloves garlic, minced
  • 1 pound lo mein noodles or thin spaghetti, cooked al dente and drained well
  • ½ cup aged tamari soy sauce
  • 1 tablespoon toasted sesame oil
